John Coolidge, the father of Calvin Coolidge, the 30th President of the United States, opened the Plymouth Cheese Factory in 1890. Plymouth Cheese is an American heritage cheese with its own unique characteristics and a fine reputation. The Plymouth Cheese Factory in Plymouth, Vermont, is one of the oldest cheese operations in America.

Grace’s Choice is named after Grace Coolidge, the vivacious and talkative wife of taciturn Calvin, 30th president of the United States and son of the founder of the Plymouth Cheese Company. Using the same raw cow milk from which Plymouth’s other signature cheese is made, cheesemaker Jesse Werner fashions the 8 pound, lightly washed, natural rind Grace’s Choice. The cheese is creamy, smooth, buttery and delicious. Grace’s Choice is delicious as a table cheese and perfectly suited to the cold days of November.
