When young this cheese has distinct notes of lemon. As the cheese ages the flavors develop and change, creating flavors of cultured yogurt, arugula and black pepper. This cheese can go savory or sweet. Try it with some caramelized onions or mostarda — or enjoy it with some fresh stone fruit like peaches or cherries.
