After some very careful research here at the co-op, we’ve uncovered a few wine and cheese pairings that we’d like to share. 😁
Jasper Hill Cellar’s Cabot Clothbound Cheddar & La Riojana Cabernet Sauvignon
Jasper Hill’s Cabot Clothbound Cheddar comes from a collaboration with Cabot Creamery. A special batch of Cabot cheddar is aged in Jasper Hill’s Cellars, and the result is a delightfully savory, nutty cheese with a trademark cheddar tang. Jasper Hill describes this cheese as “approachable but complex,” so even if you tend to veer away from stronger cheddars, you might want to give this one a try. It pairs well with La Riojana’s Fair Trade Cabernet Sauvignon, a classic fruit-forward Cabernet Sauvignon with a spicy, tannic backbone that stands up nicely to Cabot’s and Jasper Hill’s collaborative cheddar.
Blythedale Farm Vermont Brie & Stellar Winery Chardonnay
Stellar Winery sources its organic grapes from Fair Trade Certified farms that are part of their Stellar Multi-Estate in South Africa. Stellar supports many developmental initiatives that strive to improve farmworkers’ living and working conditions, and this care is evident in the wine they produce. Their Chardonnay has notes of oak, apricot, and citrus with a balanced acidity that pairs nicely with Blythedale Farm’s Vermont Brie. This Brie is luscious and buttery, with a smooth texture and gentle earthiness that perfectly offsets the bright citrus and oak of Stellar’s Chardonnay.
