BARNANA Organic Chewy Banana Bites
BARNANA is on a mission to end food waste on organic banana farms by upcycling the bananas that used to go to waste. When “imperfect” bananas have scuffs, are a little too ripe, or aren’t the perfect size they’re typically rejected for export. Farmers lose up to 20% of their bananas! BIG PICTURE FARM Caramels
Louisa Conrad and Lucas Farrell are making some of the most delicious caramels you have ever tasted at their picturesque farm in southern VT. Their secret ingredient is the delicious milk from their herd of happy and healthy, “free-browsing” companions. You will want to eat these all yourself (try all 3 flavors— Brown Butter Bourbon, Sea Salt & Vanilla, and Raspberry Rhubarb) but just in case you’re inclined to share, the caramels come in a sweet box with drawings of the goats and it’s a lovely local gift to bring when you’re traveling this summer. BTW, you’ll find these above the cheese case.
MINA Moroccan Preserved Lemons
We’ve now got Preserved Lemons on our shelf. Lemon pulp and rind are essential to Moroccan cuisine where they are used in tagines and salads. They also compliment any dish that benefits from a lemony taste. Try this easy Asparagus & Broccoli Salad with Preserved Lemon Dressing:
RECIPE
1 large head broccoli, cut into medium florets
1 bunch asparagus, trimmed and halved
🍋 Preserved Lemon Dressing:
6 tbsp extra-virgin olive oil
4 tbsp Mina preserved lemons brine
2 tbsp Mina preserved lemon pulp, minced
2 tsp Mina preserved Lemon rind, minced
2 tsp Dijon mustard
Black pepper, to taste
Shaved Parmesan, to taste
Make the dressing by combining all ingredients well— shake in a jar or whisk in a bowl. Toss the broccoli and asparagus in the extra-virgin olive oil, and grill until they are slightly cooked but still crisp. Transfer to a bowl, then dress with preserved lemon dressing and top with shaved parmesan. Enjoy!
