Shaved Brussels Sprout Salad with Walnuts, Apples and Asiago


  • 2 lbs Brussels sprouts, cleaned and trimmed
  • 1 crisp apple
  • ½ cup walnuts, toasted and chopped
  • ¼ cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 2 tsp Dijon mustard
  • ¼ cup shaved asiago cheese
  • Salt and pepper to taste


With a sharp knife, thinly slice Brussels sprouts while holding onto the stem end. Cut apple into thin slices. Whisk together oil, vinegar, maple syrup, mustard and salt and pepper. Toss dressing with the sprouts and apples. Top salad with toasted walnuts and asiago cheese.
