Baked Apples Stuffed with Spiced Citrus Filling


  • 4 large baking apples (Jonathan, Braeburn, and Red Rome are good choices)
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 1 tbsp fresh grated ginger
  • ½ tsp ground cloves
  • ¼ tsp salt
  • Zest of 2 oranges
  • 1/2 cup chopped toasted nuts (almonds, walnuts or pistachios are good)
  • 3/4 cup ricotta cheese
  • Juice of 2 oranges (1/4 cup)
  • ¼ cup apple juice

Preheat oven to 375 degrees F. Wash apples and cut in half horizontally. Scoop out cores with a melon baller or sharp spoon almost to the bottom of the apple. Combine remaining ingredients, except for orange and apple juice. Spoon filling into apples and place in a buttered rectangular baking dish. Pour orange and apple juice into dish and cover loosely with foil. Bake for 30 minutes, remove foil and bake for an additional 15-20 minutes or until apples are tender and juice is bubbling. Serve apples with sauce from pan and ice cream or Greek yogurt.
