Maple-Nut Granola with Apricots

Can be made with any combination of nuts, seeds and dried fruit. Serve over plain yogurt mixed with a drizzle of maple syrup.

  • 6 cups rolled oats
  • ¼ cup ground flax seeds
  • 2 cups sliced almonds or chopped nuts
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup sesame seeds
  • 1 teaspoon salt
  • ½ cup oil
  • ¾ cup maple syrup
  • 2 cups chopped dried apricots (or other dried fruit)

Preheat oven to 325 F. Mix all ingredients together in a large bowl. Spread granola evenly on two baking sheets. Bake for about 30 minutes. Stir in apricots and bake for an additional 10 minutes or until golden brown. Allow granola to cool completely before storing in air-tight containers.
