Brighten up wintertime with this week’s sale produceCara Cara oranges. These vibrant oranges are packed full of vitamin C, fiber, and the antioxidant lycopene. Vitamin C is a water-soluble vitamin important for immune health, collagen for healthy skin and wound healing, enhanced absorption of iron, and functions as an antioxidant. Fiber aids in digestion, lowering cholesterol, and blood sugar level. Lycopene is a free radical fighting antioxidant that gives the Cara Cara orange flesh the bright pink-orange color. Enjoy seasonal Cara Cara oranges as part of your balanced diet with a bright and sunny Kale & Cara Cara Orange Salad.

This salad is also filled with other nutritionally valuable food—kale provides vitamin K. Vitamin K is important for coagulation and aiding the body in calcium absorption. Kale is also a source of calcium which we know is very important for bone health. And in addition to adding crunch, almonds are a source of heart healthy fats.

You’ll also find ginger and local Vermont Galarina apples on sale at our co-op this week. Ginger contains antioxidants that fight harmful toxins found in our body. In many ancient cultures ginger was used for medicinal purposes to increase immune function. Galarina apples are a good source of vitamin C and fiber. As mentioned before, vitamin C aids in skin health. During the dry winter consuming high amounts of vitamin C and other antioxidants may help with pesky dry skin. Our Apple, Carrot & Ginger Smoothie recipe is packed with antioxidants and anti-inflammatory foods to keep your body winter-ready.

This smoothie also includes bananas which add potassium—helping to keep your blood pressure under control and and carrots which add additional antioxidants called beta carotene.

RECIPES

Kale & Cara Cara Orange Salad

Adapted from Authentic Suburban Gourmet

Serves 4

Ingredients

Vinaigrette:

½ shallot, minced

1 garlic clove, minced

1 T honey

1 teas Dijon mustard

3 T champagne vinegar

½ cup extra virgin olive oil

salt and pepper to taste

Salad:

5 to 6 cups kale, stems removed and roughly chopped

3 Cara Cara oranges, cut in half and segments removed

½ cup almonds, dry roasted and salted, roughly chopped

½ cup Manchego cheese, grated

salt and pepper to taste

Directions

1. Put all the ingredients for the vinaigrette into a mason jar and shake well.

2. Add all of the salad ingredients to a large bowl and add half the vinaigrette and toss well. Taste and add more dressing if desired. If you like additional cheese or almonds, feel free to add those along with oranges. Enjoy!

Apple, Carrot & Ginger Smoothie

Serves 1

Ingredients

3/4 cup ice cubes

2 apples, cored and quartered

2 medium carrots, ends trimmed, cut into one-inch lengths

1/2” to 1” square knob fresh, peeled ginger (as preferred)

1/2 navel or Cara Cara orange, peel and pith removed

1/2 small banana, peeled

1 tbsp golden flax seed meal (if desired)

1/2 to 1 cup water (depending on preferred consistency)

Directions

1. Place ice cubes in blender pitcher, followed by apples, carrots, ginger, orange, banana, and flax meal. Add in 1/2 cup water. Blend on high for approximately 1 minute, until ingredients are completely broken down and puréed. Blend in additional water to thin out, if desired. Serve immediately.
