1 lb whole grain angel hair pasta
Garlic, at least 2 cloves finely chopped
3 cups diced fresh tomatoes
Fresh basil, about a handful thinly sliced
Salt, pepper, and red pepper flakes to taste
Olive oil for drizzling
Parmesan or other hard cheese for serving
Cook angel hair pasta until barely done. Drain pasta and toss with garlic and tomatoes. Drizzle with olive oil and season with salt, pepper and red pepper flakes if desired. Serve, sprinkled with fresh basil and Parmesan cheese. For a variation, try adding chopped Greek olives and feta cheese instead of the basil and Parmesan.
